  • Pepper Sauces were an important staple in the 19th century American diet, enjoyed for their distinctive flavor and for their ability to mask unpleasant tastes. They were commonly used to season meat that had spoiled due to lack of cold storage, especially useful in hot and humid summers when unsavory meats were served on a regular basis.
  • Pepper sauces were often bottled in fancy cathedral-style jars, designed with ornately embossed arches and panels, much like one would see in a real cathedral.
  • Though most of the Cathedral Pepper Sauce Bottles recovered from the wreckage were found in varying shades of aquamarine, there were also a few examples in shades of green. Their exceptional beauty and limited number makes them highly prized among collectors.
